Mediterranean Lemon-Herb Chicken with Quinoa Salad

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • Zest and juice of 1 lemon

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and pepper, to taste

For the Quinoa Salad:

  • 1 cup quinoa, rinsed

  • 2 cups water

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 red onion, finely chopped

  • 1/4 cup kalamata olives, sliced

  • 1/4 cup feta cheese, crumbled

  • 1/4 cup fresh parsley, chopped

  • 2 tablespoons olive oil

  • Juice of 1 lemon

  • Salt and pepper, to taste

Instructions:

Chicken:

  1. In a bowl, whisk together olive oil, garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper.

  2. Place the chicken breasts in the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes in the fridge, or overnight for more flavor.

  3. Preheat your grill or grill pan to medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked. The internal temperature should reach 165°F (74°C). Let it rest for a few minutes before slicing.

Quinoa Salad:

  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then cover and reduce the heat to low. Simmer for about 15 minutes, or until the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and allow to cool.

  2. In a large bowl, combine the cooled quinoa, tomatoes, cucumber, red onion, olives, and parsley.

  3. Drizzle with olive oil and lemon juice, then toss to combine. Season with salt and pepper to taste.

  4. Gently fold in the crumbled feta cheese.

To Serve:

  • Arrange the sliced grilled chicken over a bed of the quinoa salad. Serve with a lemon wedge on the side for extra zest, if desired.
