Ratatouille Niçoise with a Global Twist

In the spirit of the Olympics, where diverse cultures converge, we've crafted a simple recipe that starts with a French classic and invites global flavors to the table. Our Ratatouille Niçoise with a Global Twist celebrates French culinary roots while embracing the international community gathered in Paris for the 2024 Olympics.

Ingredients:

  • For the Ratatouille:

    • 2 small zucchinis, sliced into thin rounds

    • 1 small eggplant, sliced into thin rounds

    • 1 red bell pepper, cut into thin strips

    • 1 yellow bell pepper, cut into thin strips

    • 2 tomatoes, thinly sliced

    • 1 onion, thinly sliced

    • 3 cloves of garlic, minced

    • 1/4 cup olive oil

    • Salt and pepper, to taste

    • 1 teaspoon herbes de Provence

    • Fresh basil leaves, for garnish

  • Global Twist:

    • 1 tablespoon of soy sauce (Asian influence)

    • 1 teaspoon of smoked paprika (Spanish influence)

    • 1 tablespoon of chopped cilantro (Latin American influence)

    • Optional: a sprinkle of feta cheese (Greek influence) or a dollop of yogurt (Middle Eastern influence)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).

  2. Prepare the Vegetables:

    • In a large baking dish, layer the sliced zucchinis, eggplants, bell peppers, tomatoes, and onions. Sprinkle minced garlic throughout the layers.

  3. Season:

    • Drizzle olive oil over the vegetables. Season with salt, pepper, herbes de Provence, smoked paprika, and soy sauce. Mix gently to coat all the vegetables with the seasoning.

  4. Bake:

    • Cover the dish with aluminum foil and bake for 35-40 minutes. Remove the foil and bake for an additional 10-15 minutes or until the vegetables are tender and lightly browned.
